Hippocrates Soup

Have you heard of “Hippocrates Soup” ? This soup is one of the foundations of the Gerson diet and is thought to be very nutritious, healing and nourishing. The medicinal ingredients of “Hippocrates Soup” are leeks, celery root, and parsley root. The potatoes are added for calories and protein content. The onions and tomatoes are added for flavour. This simple and medicinal vegetable soup is a very tasty meal and additionally, it's quick to prepare. One of the key ingredients in the Hippocrates Soup is garlic. Back in 460-370 BC, Hippocrates was known to prescribe garlic to his patients to combat respiratory problems, parasites, poor digestion, and fatigue.


Hippocrates soup is rich in nutrients necessary to perfectly functioning immune system. For its preparation, you need the ingredients below. Make sure they are all organic. Organic vegetables ensure clean,  chemical-free ingredients that are essential for this broth as the recipe calls for the produce skins to be left on.

  • 4 stalks celery

  • 1 parsley root

  • 2 white onions

  • 2 small or one large leek

  • 4 cloves of garlic or more

  • 2 carrots

  • 500 g tomatoes

  • 400 g potatoes

  • A handful of fresh thyme 

  • A handful of parsley leaves


Preparation

Wash all vegetables, but do not peel them as the majority of the minerals and nutrients are stored just beneath the skin. Cut into thick pieces, put in a saucepan and add filtered water to the height of the vegetables. Simmer slowly for 2- 3 hours until it is ready. Once cooked, blend it.
